Salad and Honey Vinaigrette

Honey Vinaigrette

Ingredients:
1/4 cup rice vinegar
1 and 1/2 teaspoons Dijon mustard
2 tablespoons honey
salt, pepper
3/4 cup olive oil

I keep it simple -- combine all ingredients in a jar, cover and shake, shake, shake!

Salad:

about 10 ounces of whatever kind of greens you want (I usually use romaine)
1 cup crumbled goat cheese
1/2 cup dried cranberries
1/2 cup toasted pecan pieces
